Cauliflower and Broccoli Cheese-A Step by Step Guide

This is a great recipe to make as an accompaniment to your Sunday roast.This recipe serves 2.

25g butter
25g plain flour
300ml milk
100g grated cheddar cheese
100g broccoli
100g cauliflower
50g finely grated parmesan cheese (Optional)

Cook the broccoli and cauliflower in a large saucepan of boiling salted water for 8-10 minutes; drain well and set aside.
Melt the butter over a medium heat in a saucepan slightly larger than that used for the broccoli. Add the flour and stir to form a roux, cooking for a few minutes.

Gradually whisk in the milk, a little at a time. Cook for 10-15 minutes to a thickened and smooth sauce.
Preheat the grill to hot.
Remove the sauce from the hob, add 75g of the cheddar cheese and stir until the cheese is well combined and melted.

Add the vegetables in a deep, suitably-sized ovenproof dish. Cover with the white sauce.
Sprinkle over the remaining cheddar and parmesan and place the dish under the hot grill. Cook the cheese until it is brown and bubbling, serve immediately.
